Macro-Friendly Mini Cheesecakes
Servings: 2 (1 Mini Cheesecake = 1 Serving)
Prep Time: 5 Minutes
Fridge Time: Optional or 1 Hour
Ingredients:
1 Small Container (5.3oz) Fat-Free Plain Greek Yogurt
1 Scoop Level-1 Vanilla Ice Cream
1 Tsp Sugar-Free Cheesecake Pudding Mix
2 Tbsp Low-Fat Cream Cheese
4-5 Regular Strawberries, Chopped
1/3 Cup Blueberries
2 Mini Graham Cracker Crusts
2 Tbsp Sugar Free Whipped Cream
Directions:
For this recipe, you'll need:
• 1 Small Mixing Bowl
• 1 Spatula
1. In a small mixing bowl, combine the Greek yogurt, Level-1, pudding mix, and cream cheese. Stir with a spatula until well combined.
2. Fold in 2/3 of the chopped strawberries and blueberries.
3. Split the mixture between 2 mini graham cracker crusts.
4. For the best cheesecake consistency and flavor, chill it in the fridge for at least 1 hour before serving.
5. Top each cheesecake with whipped cream and the remainder of the chopped strawberries and blueberries. Enjoy!
